Leek, lettuce - garden loot

Last night's supper comprised mostly garden loot. Yes, I'm beginning to pay more attention - to the garden - and generally.

The loot included, in no particular order, a leek (self-sown - and more to come), lettuce, parsley, chives, thyme, mint and strawberries. Oh, and the only herb not from my garden - the dill. My gardening thrill is returning.

The final result? A leek and mushroom stuffed omelette with a cucumber and strawberry salad.

I had done a bunch of mushrooms a few days before, so I slow cooked the leeks with butter, thyme and a little salt and pepper. That leek was more than I needed for that meal so I have some left for another...probably pasta...

The salad, for which the chives and dill are critical, was had been my offering in the jar at the market. It was an experiment because I'd found cucumbers on a special offer and my strawberries are coming in thick and fast. That said, there weren't enough - then - to pack and sell on their own. We shall see.

For my supper, I plated my salad on a bed of mostly bitter endive, and dressed with fresh lime (the last one off my tree until the next crop) juice and olive oil. Oh, and yes, it's a combination I'll do again. Especially with fresh lime juice and a crack of black pepper and salt.
