Thank you! Oh wow! That is interesting! If you have Netflix, you should check out a series called Anthony Bourdain, Parts Unknown Season 2, the Copenhagen Episode. It's basically about a world famous restaurant where they mainly use wild vegetables and plants that they forage for - it blew my mind!
