The fried rice with Mushrooms and Green Asparagus
Hello, friends, vegan lovers, and fellow community members, greetings! A new month has started, and we have to get back into our routines. After came back from India, we've taken some time to relax and recharge our energy. and now I have begun my work. Balancing work and free time can be different then just relaxing and enjoying. Today, I had limited time to prepare food, but I wanted to share a new creation with you all. So, here’s a lovely recipe that I made with love!
The fried rice with Mushrooms and Green Asparagus
It is easy, simple, and fast. It took only 16 minutes
8 minutes to chop vegetables and 8 minutes to cook.
for the two people's dinner.
Not a big list of ingredients
300 grams of asparagus
250 grams button mushrooms
1 spring onion
1 red chili
6-7 small garlic cloves
2 tbsp olive oil
1 slice of lime.
Salt and pepper to taste
2 cups cooked rice leftovers.
I washed and cut Asparagus into cross-sections.
This took me around 5 minutes for special way cutting.
Chopped spring onion, garlic, and red chili.
Mushrooms are also sliced.
In a pan, I boiled water, added 1 tsp salt, few drops of lime juice, and few drops of oil.
And then put those asparagus slices in the boiling water just for 1 minute.
It was just a minute, and I switched off the heat.
Removed asparagus from the water using a special strainer/spoon.
( I saved that water for use.)
And kept them aside.
Meanwhile, I heated the skillet and added oil. When the oil was hot, I added garlic, spring onion, and chili to the oil, sautéing just to release their aroma before adding the chopped mushrooms.
Stirred the mushrooms for 2 minutes.
I felt the oil was a little less, so I added a little more oil to the mushrooms.
Salt and pepper.
And asparagus.
Stirred it one more minute.
Saved half the portion just to have the mushroom asparagus taste.
In the half mixture of mushroom asparagus, I mixed rice and just late it for 2 minutes more. Closed the heat and covered it until table is ready.
The different way we ate asparagus first time. and it was so delicious.
