Delicious Oat Swallow with Egusi Soup.

Hello my friends in Vegan community. I believe you're doing fine.

Welcome to my blog. I love Oat recipes and I thought of making oat swallow with Egusi (melon seed) soup. I grew up eating egusi soup, I will say that, it is a traditional dish in my country Nigeria. I can't stay a week without eating swallow. I have been eating many kinds of swallow like, semovita, wheat, cassava, guinea corn, and millet . Today, I decided to try oat swallow with my favorite soup.
Let move over to the recipe.

1 cup white oat
4 tablespoon Egusi (melon seed) blended.
2 cayenne peppers
½ teaspoon chilli powder
½ a bulb of onion
2 tablespoon dry green peas
⅛ teaspoon of salt
3 stalks pumpkin leaves.
Vegetable broth

RECIPE

PREPARE OAT SWALLOW

Mix oat with water to form paste and stir constantly on a medium heat until it thickens to your desire consistency.
Mold it with your palm to form a ball.

PREPARE EGUSI SOUP

  • First I sliced the ingredients; onions, tomatoes, chilli peppers and cayenne peppers.

  • I already have blended Egusi, add it water to form paste.
    Saute sliced onion, minced garlic and sliced tomatoes.

  • Add cayenne pepper and chlli powder and stir very well.

  • Add green peas and stir continuously for 2 minutes.

  • Add egusi stir and gradually add vegetable broth and stir.

  • Add pumpkin leaves then season with salt and allow to simmer for 10 minutes until the soup thickens.
    My delicious Oat swallow with Egusi soup is ready.
    Serve hot and enjoy Nigerian delicacy.

Oh my goodness! I haven't cook egusi soup this way before. It is very delicious and tasty. The texture of the green pea is nice because I didn't cook it to be tender and the heat of the spices is moderate.
