Moi moi has been my children's favorite meal till date. It is is a popular meal or snack in my country and my children don't joke with it. They were craving so much for it, and I was not in the mood to prepare such delicacy because it requires patience due to the time consumption. Besides there was no power supply at the moment, since I have to make use of my grinder. All my excuses fell on deaf ears. I have no other choice than to dance to their tone.😀 Let's proceed with the recipe:
INGREDIENTS
3 Cups of black eye beans soak 5 minutes , peeled and ground
10ml of palm oil
1 red onion
1 tablespoon cayenne pepper flakes
4 bonnet pepper
3 tablespoon of chopped scent leaves
½teaspoon of black pepper
½ teaspoon ground coriander
¼ teaspoon ground cumin
¼ teaspoon ground Fenugreek
Salt to taste
20ml of water
RECIPE
- Soak beans for 5 minutes peeled and grind. I took my beans to the mill since there was no power supply at the moment.
- Add palm oil cayenne pepper, bonnet pepper,black pepper, coriander,cumin, Fenugreek, salt and scent leaves. Mix very well.
I have leftover wrapped aluminum foil
- Spoon mixture into your heavy duty aluminum foil or banana or etere leaves. As I scoop the mixture into the wrapped foil, I bent the top edge diagonally to one side of the aluminum foil, then I started to fold it horizontally downwards to hold tight.
- Steam the wrapped moi moi for 30-40 minutes until well firmed.
You can serve with pap, rice or your favorite dish. My children enjoy theirs with orange juice as snacks.
The scent leaves added unique flavor and aroma to the moi moi and the spices was optimum.
It is so tasty and mouth watering.
