Here's how to prepare Bitter Gourd Moju deliciously...

How are you guys? I beleive you are spending really nice weekend with your loving once. I have been wanting to cook my own food for a long time. I have shared the food I have prepared on several occasions in the past. Recently, with the harvest of several vegetables grown in the garden, I was able to use those vegetables for home consumption. This morning, I was able to make this delicious Bitter Gourd Moju using the bitter gourd pods that I had picked from the vine. It is a blessing to be able to prepare this dish using fresh, healthy bitter gourd. This is a recipe that you can also try as a vegetarian.

Ingredients

Two bitter gourds (250 grams)

Large onion
One tomato
A few green chili pods
Little bit garlic
Two cardamom pods
Few pieces of cinnamon

1/4 cup of water
One tablespoon of vinegar

Coconut oil
One teaspoon of crushed ginger and garlic
One teaspoon of chili powder
Half teaspoon of pepper powder
One teaspoon of salt
Two teaspoons of sugar
1 tablespoon of tomato sauce

Prepared steps

First, wash the bitter gourd well and cut it into thin slices.

Then slice the green chilies crosswise. Chop the onion and garlic into small pieces.

Place a pan on the stove and add oil. When the oil is hot, fry the chopped bitter gourd pieces in the oil until they turn dark brown.

Next, fry the chopped onions, chopped green chilies and some garlic in heavy oil. (Put them in the oil quickly so that the chilies do not change color.)

Heat a pan with a little oil. Add the crushed ginger and garlic mixture, cinnamon and cardamom and fry for a while.

Then add chili powder, pepper powder, sugar, salt to taste and tomato sauce to this and mix.

Add vinegar and about a cup of water and make it like a curry. Let this gravy boil a little. Add sugar, salt, vinegar, and more according to taste.

Now add the fried bitter gourd, onion, garlic, and chili pepper mixture that you kept aside, reduce the heat to low, and stir well. Stir and turn off the heat quickly, otherwise it will lose its moisture and start to dry out.

The bitter gourd is very easy to eat by preparing it as a moju to make it more appetizing. My daughter and family members really enjoyed having this Bitter gourd moju.
