Very nutritious lotus root curry.

Among the many hidden treasures of Sri Lankan cuisine, the humble lotus root holds a special place—for both its taste and nutritional benefits. With its slightly sweet and earthy flavor, this vegetable is rich in dietary fiber, essential vitamins, and minerals that support heart health and digestion. Today, I’m preparing a traditional yet highly nutritious lotus root curry, gently simmered in coconut milk and aromatic spices. This dish brings the authentic flavors of the village straight to your kitchen while nourishing your body at the same time.

Let’s take a step-by-step look at how to prepare this wholesome curry.

Materials Used.

lotus root 250g.
1 Cup of Thickened coconut milk.
1/ Cup of Thin coconut milk.
3 1 green chilies, chopped.
A finely chopped onion.
A piece of Garcinia cambogia.
cinnamon sticks, 2 pieces.
2 pieces. of Pandan Leaves.
Some curry leaves.
4 cloves of garlic, finely chopped.

Salt as needed.
2 Tablespoon of coconut oil.
1 Teaspoon of Mustard Seeds.
1/2 Teaspoon of Fenugreek seed.
2 Tablespoon of white rice.
1/2 Teaspoon of turmeric powder.
1 Teaspoon of chili powder.
1 Tablespoon of Roasted curry powder

The cooking process as follows.

First, take the lotus root and peel off the outer skin. Then, slice it thinly into round pieces.

Next, take two tablespoons of white raw rice, wash it thoroughly with water, and then grind it well using a mortar and pestle.

Next, add the ground white rice paste and a little turmeric powder to the sliced lotus root. Mix everything well until evenly coated.

Now, take a pan and add about 2 tablespoons of coconut oil. Place it on the stove, and once the oil is heated, add mustard seeds, fenugreek seeds, chopped garlic, onions, green chilies, curry leaves, pandan leaves, cinnamon, and chili powder. Sauté everything well until aromatic.

Now, add the lotus root slices, a piece of Garcinia cambogia (goraka), and a small amount of thick coconut milk to the same pan. Cook everything together for about 4 minutes.

Next, once it is well cooked, add a little more thick coconut milk. Then, add salt to taste and some roasted curry powder. Let it simmer for a few more minutes, then remove from heat.

So, the final result is a creamy, mildly spiced curry that pairs beautifully with a warm plate of rice. Every bite strikes a perfect balance of tradition, nutrition, and comfort.
