🍂 1 tsp ground cinnamon

🥄 ½ tsp baking powder

🧂 ¼ tsp salt

🥛 2 cups unsweetened plant-based almond milk

🍀 1 tbsp melted vegan butter or coconut oil

🌼 1 tsp vanilla extract

🧈 Oil or vegan butter for cooking the crepes

🍏 3 medium apples, peeled, cored, and diced

🍁 2 tbsp maple syrup

🍋 1 tbsp lemon juice

🍂 1 tsp ground cinnamon

🌱 ½ tsp ground ginger, optional

🍄 ¼ tsp ground nutmeg, optional

💧 Pinch of salt

🍀 Vegan butter/oil for sautéing

🥥 ½ cup full-fat coconut milk, from a can

🍬 ¼ cup brown sugar

🍁 2 tbsp maple syrup

🌼 1 tsp vanilla extract

🧂 Pinch of sea salt

Instructions

1- Prepare Crepe Batter:

  • In a large mixing bowl, combine the dry ingredients: gluten-free oat flour, tapioca flour, brown sugar, ground cinnamon, baking powder, and salt.

  • In a separate measuring cup, whisk together the almond milk, melted vegan butter, and vanilla extract.

  • Gradually add the wet ingredients to the dry mixture, whisking until smooth. Let the batter rest for 10 minutes.

2- Cook Crepes:

  • Heat a flat griddle or crepe pan over medium heat and lightly grease with oil or vegan butter.

  • Pour approximately ¼ cup of batter onto the hot pan and swirl to create a thin, even layer.

  • Cook for 2-3 minutes on each side until golden brown. Transfer to a plate and repeat with the remaining batter.

3- Prepare Apple Cinnamon Filling:

  • In a frying pan, sauté diced apples in vegan butter or oil until slightly softened.

  • Add maple syrup, lemon juice, ground cinnamon, and optional ginger and nutmeg, with a pinch of salt. Cook until apples are tender and coated in syrup.

4- Prepare Salted Caramel Sauce:

  • In a small saucepan, combine coconut milk, brown sugar, and maple syrup. Simmer over medium heat for 10-15 minutes, stirring until thickened.

  • Stir in vanilla extract and sea salt, then let cool slightly.

5- Assemble and Serve:

  • Spoon apple cinnamon filling onto each crepe, roll up, and stack on a serving plate.

  • Drizzle generously with salted caramel sauce. Optionally dust with extra cinnamon for garnish.
